Breakfast Egg Scramble in Mini Bread Bowls
Yields: 5 servings
Prep Time: 10 minutes
Total time: 40 minutes
5 Small bread rolls
3 tablespoons unsalted butter, room temperature
8 strips cooked bacon, chopped
1/3 cup sharp cheddar cheese, plus more for topping
¼ cup chopped chives
2 tablespoons milk
½ teaspoon kosher salt
1/4 teaspoon ground black pepper
Preheat oven to 350°F.
Cut into top of the rolls, scoop insides of rolls, removing the soft center part. Leave about ¼ inch intact. Do not go thru the bread, the egg will leak. Spread butter inside each roll. Place inside a 9x 13 baking dish.
In a small bowl, whisk together eggs, milk, chives salt and pepper. Fill each roll with the egg mixture. Top with cheese. Cover with foil. Bake for 25 to 30 minutes. Remove foil last 5 minutes. Serve immediately.
