Brownie Caramel Swirl Mug Cake

Yield: 1 serving
Active Time: 5 minutes
Total Time: 6 minutes

Ingredients:
3 tablespoons all-purpose flour
2 tablespoons hot chocolate mix
1 tablespoon granulated sugar 
1/4 teaspoon baking powder
1/8 teaspoon kosher salt
3 tablespoons almond or real milk
3 tablespoons vegetable oil 
¼ teaspoon vanilla extract
3 tablespoons bittersweet chocolate chips 
Caramel candy

Directions:
Put the flour, sugar, cocoa powder, baking powder and salt in an 8-ounce microwave-safe mug. Blend thoroughly with a fork. Add the milk, vegetable oil, vanilla. Blend until smooth. Stir in the chocolate chips. Place caramel in the center and push into the middle of brownie. Microwave on high for 60 to 90 seconds. Do not overcook or the cake will be dry. Let cool for 1 to 2 minutes before eating.

Banana Mug Muffin

Yields: 1 serving
Prep Time: 5 minutes
Total time: 7 minutes

Ingredients:
1/2 banana, ripe, mashed
1 egg, lightly beaten
1 tablespoon butter, melted
2 teaspoons milk
4 tablespoons all-purpose flour
1 teaspoon granulated sugar
½ teaspoon baking powder
¼ cup semi-sweet chocolate chips
1 tablespoon chopped walnuts

Directions:
In 12 ounce microwavable mug, whisk together flour, sugar, and baking powder. Add the egg, mashed banana, and milk. Stir until combined. Stir in chips and nuts. Microwave for 1 -2 minute
on high. Remove and let sit for 1 minute before eating.

Gluten-Free Lemon Mug Cake

Yield: 1 serving
Active Time: 5 minutes
Total Time: 6 minutes

Ingredients:
3 tablespoons almond flour
1 tablespoon granulated sugar
1/2 teaspoon baking powder
1/8 teaspoon kosher salt
Zest and juice of half Lemon
1 large egg, lightly beaten
2 tablespoons coconut oil

Directions:
In a 10-ounce microwave safe mug, whisk almond flour, sugar, baking powder, and salt. Add zest, lemon juice, coconut oil, and egg. Stir until well combined. Microwave for 90 seconds. Remove and let sit for 1 minute. Top with Whip cream.
